Today, cheesecake is a classic that can be prepared in many ways. From the traditional pure to a variant with a delicate lavender. But it’s autumn, and pumpkins are everywhere now. So why not use it in this popular dessert?
Pumpkin cheesecake with butter cookies and a subtle touch of rum is the perfect dessert for those looking for a true fall dessert.

Start by making the butter cookie base. Grind them into fine crumbs, mix them with melted butter until a moist but firm mass is formed. Then spread this evenly on the bottom of the mold and press down thoroughly. Place in the oven for a few minutes until the base is golden and firm.
The filling of the cheesecake is made from pumpkin puree, which you prepare from baked and blended pumpkin. Boil the puree together with the cream, add cream cheese, sugar and a pinch of rum after it has cooled, which will give the filling a soft and warm undertone. Finally, gently stir the whipped cream into the mixture to make the filling fluffier and creamier. Stir the mixture thoroughly to create a smooth cream.
Once you have the cream ready, pour it over the biscuit base and spread it evenly. Let the cheesecake set in the fridge for at least a few hours, ideally overnight.
For decoration, you can use whipped cream, pieces of pumpkin or even small pieces of butter cookies, which will create a beautiful visual effect.
