Don’t you cook with pumpkin because of how difficult it is to peel? With Hokkaido pumpkin, you can put this problem behind you. Unlike other species, you do not have to peel it at all. Just wash it thoroughly, grate it and you have a ready base for quick and tasty pumpkin pancakes.

Hokkaido is the queen among pumpkins. Its skin is soft and softens beautifully when cooked, so you can use it whole without peeling it. Thanks to this, you save time and at the same time add more flavor and nutrients to the dish. When preparing the pancakes, just wash the pumpkin well, grate it and mix it with the egg. You can add a little flour or leave it out entirely if you want a purely veggie option.

Do you like bolder flavors? Add garlic or nutmeg to the dough. And if you want to really kick things up a notch, try adding a pinch of rosemary or chilli for a more spicy note. You can play with the spices according to your mood, pumpkin pancakes are very versatile and adapt to what you have at home or what you feel like.

Gluten-free option

If you fancy a gluten-free version of pumpkin pancakes, there are several options for that. You can replace wheat flour with gluten-free flour, such as rice, corn or buckwheat flour, which will give the pancakes a slightly different taste and texture.

Buckwheat flour adds a slightly nutty touch, while rice flour maintains a neutral taste and a soft consistency. Another option is to completely omit the flour and prepare the pancakes only from vegetables. Grated Hokkaido pumpkin, some courgette, carrot or potato, and an egg combine to create a mixture that just needs to be seasoned and fried or baked.

You can adjust the frying or baking itself depending on whether you want to go for classic fried pancakes or want a healthier alternative. You will get a beautifully crispy surface in the pan, and if you choose olive or coconut oil, you will also give the pancakes an interesting taste. For a lighter version, the pancakes can be baked in the oven on a baking sheet, you just need to lightly brush the surface with oil so that they remain nice and juicy.
