We are a nation of mushroom pickers, but most of us play it safe and collect mainly porcini mushrooms or porcini mushrooms. Imagine the damage if you leave beds lying in the forest. These mushrooms are not just for steaks or crackers. Unique spices can be prepared from bedel, which will bring the magic of the forest to your kitchen and tastes that you will never get tired of.
Bedly has a delicate taste with a hint of hazelnut, and thanks to this, it is easy to prepare excellent homemade spices that will add a new dimension to dishes. This bedel powder is suitable for soups, sauces, risottos or meat dishes and can perfectly enhance the taste of mushroom dishes, such as the traditional Czech kuba.

Preparation
Once you have thoroughly dried the beds, grind them into a fine powder. Previously, a mortar was used for this, but today you can get by with an ordinary mixer, which makes the job much easier. You can leave the powder from dried bedel pure, without other ingredients, or create your own seasoning mixture. You can add salt or herbs such as basil, lovage or thyme to the powder, but also, for example, cumin or ground paprika.
Bedel spices should be stored in a tightly sealed jar to prevent moisture from getting inside. The ideal place for storage is a cool and dark environment, which will keep the spices fresh all year round. Thanks to this, you can enjoy the taste of freshly ground mushrooms even outside the mushroom season.
