During the fermentation of cellulose, which is otherwise indigestible to us, the bacteria create substances such as butyrate and propionate, which, according to the latest findings, are necessary for the optimal regulation of our immune response organism,” says immunologist Jakub Abramson.

Glass containers and ceramic pots are the best choice for storing sauerkraut. They are naturally impermeable and allow fermentation under optimal conditions. Before storing cabbage in a container, it is important to thoroughly clean it with hot water or sterilize it to avoid bacterial contamination. After filling, the cabbage must remain submerged in its own juice to prevent air from entering and mold forming.

Storage conditions

Temperature is one of the main factors for successful sauerkraut storage. Ideal conditions are provided by an environment with a temperature of 0 to 4 °C, such as a cellar, cold pantry or refrigerator. It is important to maintain a stable temperature and avoid opening the container frequently to prevent air from entering.

Quality maintenance and mold prevention

Regular inspection of the cabbage is essential. Every two weeks it is advisable to make sure that the juice level covers the surface of the cabbage. If the level drops, it is possible to add salt solution (approximately 20 grams of salt per liter of water). Cabbage treated in this way maintains optimal acidity, which prevents the development of undesirable microorganisms.

Tips for extending shelf life

To extend the shelf life and preserve the crispiness, you can add a few leaves of horseradish or bay leaves, which have natural preservative effects. It is important to use clean utensils every time you take the cabbage, so that unwanted bacteria that could disrupt the fermentation do not get into the container.

If you plan to prepare sauerkraut at home, you will need heads of cabbage, salt and favorite spices such as cumin or bay leaf.
