How long does homemade compote last?
If you want to get the most out of canned food, be sure not to store it for several years. The longer you keep the compote in the canner, the more the food changes both physically and chemically. This means that it loses color, taste, and changes in smell and consistency.
So, if you don’t want a brownish sour eggplant after opening the jar instead of a beautiful strawberry compote, it is ideal to use the compote within two years. That’s how long you can keep it in a mason jar without opening it. However, once you remove the lid, it is important to consume the compote as soon as possible, otherwise it will spoil.
