Are you bored with the traditional Sunday menu? When looking for a change from slices of cold meat, you can of course draw inspiration from all the cuisines of the world. However, if you prefer to just do a colorful, nutritious dish that will help you not spend the whole day in the kitchen, choose a salad. You can prepare it with almost any ingredients. Try to combine sources of protein, fats and carbohydrates in the right proportion. Then the Sunday Salad will serve as an independent meal.
Ingredients:
- 200 g of rice,
- 4 eggs,
- 250 g crab sticks,
- can of canned corn (400 g),
- 80 g of the white part of the leek,
- 1/2 greenhouse cucumber (about 100 g),
- medium pickled cucumber,
- 3 tablespoons of mayonnaise,
- 2 tablespoons of natural yogurt,
- teaspoon of curry,
- salt, pepper (to taste).
How to do it:
Cook the rice according to the instructions on the package. Strain and cool.
Hard-boil the eggs (8-10 minutes after the water boils). Peel, cool and cut into cubes.
Cut the crab sticks lengthwise into strips and then into small cubes.
Drain the corn from the brine (you will get about 240 g of kernels).
Clean the leek (rinse, remove outer layer) and cut into cubes. If you want it to have a more delicate taste, pour boiling water over it in a colander.
Cut the cucumbers into small cubes.
Combine all ingredients in a large bowl. In a separate bowl, mix mayonnaise, yogurt and curry. Season the sauce to taste with salt and pepper. Mix the dressing into the salad. Put it in the fridge for an hour to let the flavors mingle. Serve slightly warm (remove from the refrigerator about fifteen minutes before consumption).
