Soups taste best in autumn. The tomato one will work well not only because of its delicious taste and unique aroma, but also because of its content. One bowl is enough to forget about.
Tomato soup is a well-known dish in Polish cuisine. However, it is worth preparing it with an Italian twist. Thanks to a few ingredients, it will completely change its character and it will become your family’s new favorite dish.
To prepare Italian tomato soup you will need: Italian sausagewhich, after frying, gives the soup a bit of spiciness and a unique smoked aroma. If we don’t have it on hand, we can always replace it with minced meat. In such a situation, however, it is worth increasing the amount of smoked pepper in the dish.
What distinguishes this tomato one is the use instead of classic pasta, tortellini. These small Italian dumplings, filled with various fillings, can be easily found in the store. We recommend choosing those with a cheese interior. Combined with sour tomatoes, they will create a delicious duo that will complement each other perfectly. An additional advantage is that tortellini is extremely filling. It is it, together with the meat, that is responsible for the nutritiousness of the soup. Be sure to check if you like it.
Ingredients:
- 1 red pepper,
- 2 tablespoons of olive oil,
- 1 tablespoon of butter,
- 1 onion,
- 450 g Italian sausage or minced meat,
- 1 l
- 2 tablespoons of tomato paste,
- 4 cloves of garlic,
- 1 cup of tomato puree,
- 1 cup of whipping cream 30%,
- 400 g tortellini with cheese,
- 30 g grated parmesan cheese,
- 1 teaspoon of oregano,
- 1 teaspoon of smoked paprika,
- 0.5 teaspoon of black pepper,
- a pinch of nutmeg,
- salt and pepper to taste.
Heat the olive oil and butter in a large pot. Add the diced pepper and fry for a few minutes. Then we cut the onion into small cubes and add it to the peppers. Finally, chop the garlic and add it to the vegetables. Fry everything for another 1-2 minutes, so that all ingredients are nicely browned.
Then add the sausage and spices to the pot. Crush it using a wooden spoon. We can also use regular minced meat. Fry for about 5 minutes. Pour in the broth, add concentrate and tomato puree. Mix until the ingredients are combined, reduce the heat and cook for about 15 minutes.
Finally, add the tortellini. After two minutes, add the cream and grated Parmesan. Mix everything. Taste and season with salt and pepper. We serve it right away – tortellini after too long in hot soup may start to fall apart.
