Pork loin in tomato sauce is a quick, simple and delicious recipe for juicy meat full of flavor and aroma. Perfect for both everyday use and special occasions. If necessary, you can replace pork with beef or poultry, modifying the required baking time depending on the type of product.

You can serve the finished dish in several ways, it will taste great with baked potatoes, french fries, or purée. Worth adding here too vegetables, steamed or grillede.g. broccoli, cauliflower, carrots or green beans. A simple one will also work perfectly salad or salad with cabbage and carrots.

To prepare pork loin in tomato sauce, you will need:

  • 1.5 kg of pork loin, sliced
  • 6 cloves of garlic,
  • 200 ml of tomato puree,
  • 100 ml of water,
  • 200 g of yellow cheese or mozzarella,
  • 3 tablespoons of rapeseed oil,
  • 1 teaspoon of salt,
  • 1 teaspoon of black pepper,
  • 1 teaspoon of sweet pepper.

Wash the pork loin and dry it with paper towels. Cut it into slices about 2 cm thick. Break it up slightly, but the meat should still remain quite thick – it will soften later in the baking process. Sprinkle the meat slices on all sides with salt and pepper. Place them evenly in a large baking dish, without greasing it with oil.

Crush the garlic and place it in a small, deep bowl. Gradually add the oil and finally a pinch of salt. Grind until you get a smooth paste. Add tomato puree and peppers. Mix. Add water to the tomato-garlic paste and stir to loosen the sauce. Season to taste with salt and pepper. Cover the meat with grated cheese and then pour tomato sauce over it.

Place the ovenproof dish in an oven preheated to 200 degrees Celsius and bake for 90 minutes. At the beginning, cover them with aluminum foil or a lid and remove it 30 minutes before the end.

Place the pork loin in tomato sauce on a plate. Pour the sauce from the ovenproof dish into a small bowl so that you can easily dip the meat and dose it as needed. Serve the dish warm, with your favorite starch addition.
