Start the recipe by dividing the chicory, lamb’s lettuce and endive into smaller pieces. Cut the beetroot and pepper into thin strips, and the onion into slices or half-slices and add them to salads. Fry the chicken fillet in butter and add it to the above ingredients along with walnuts and almond flakes. Sprinkle the salad with finely chopped lemon peel and pour the sauce over it.

Endive in yogurt and mustard sauce

Endive tastes great warm, so it’s worth serving it in this version as well. You will need it to prepare it chives, dill, garlic, parsley, lemon juice, mustard, yogurt and salt and pepper.

First, wash and dry the endive, then throw it into water boiled with garlic and salt – cook it for a few minutes without covering. In the meantime, make a sauce from mustard, yogurt, lemon juice, salt, pepper and chopped dill, chives and parsley.

Melt the butter in a pot and add crushed garlic, shallots and diced potatoes. Fry everything for five minutes and add pieces of celery. Add water to the pot, cover with a lid and simmer its contents for about three minutes. Fry the endive in a grill pan, combine it with the boiling ingredients and continue cooking for another three minutes.

When the vegetables are soft, blend them with a blender, season with salt and pepper, and then decorate with a dollop of cream and chopped chives.

Pancakes with endive

What other ways can endive be used? The use of this plant in the kitchen does not end only on soups, salads and one-pot dishes! You can also use it to make delicious stuffing for pancakes, especially if you are tired of the traditional ones a long time ago.

Pancakes in this version are made from products such as: endive, garlic, smoked salmon, mozzarella, milk, egg, wheat flour, oil, salt and pepper. The first step in implementing the recipe is – start pouring them into the pan only after about 30 minutes.

Boil water with salt and pressed garlic in a pot. Cook the endive in it, then strain and season with salt and pepper. Place pieces of it along with a portion of salmon and mozzarella in the center of each pancake. Assemble them as you wish – if necessary, you can also put pieces of cheese on top. Place the pancakes on a baking tray lined with paper and bake them for about 15 minutes. Serve them immediately after removing them from the oven. Enjoy your meal!
