Preparing mushroom soup does not require any special skills. In a few moments we can have a delicious, filling and warming dinner. If you want your dish to taste like from a restaurant, be sure to add… blue cheese to it. We present the recipe for the French version of this soup.

As the name suggests – the basis of mushroom soup, of course . We also cannot forget about meat and vegetables. Many people also thicken it with cream to make it creamy.

In this recipe, we also add Provençal herbs and blue cheese with an intense and characteristic flavor. We can replace it with a slightly more delicate Camembert or Bri, or even combine these cheeses and create an incredibly exquisite dish.

What ingredients do we need to make French mushroom soup? Here is the list:

  • 4 medium potatoes;
  • 4 cloves of garlic;
  • 500 g mushrooms;
  • 1 liter of mushroom broth;
  • 3 tablespoons of butter;
  • 2 tablespoons of flour;
  • 200 ml of cream 30%;
  • a few slices of blue cheese;
  • spices: salt, pepper, parsley, Provençal herbs.

To prepare creamy mushroom soup, start by peeling, washing and dicing the potatoes. We also peel, cut and fry the mushrooms in butter.

In the next step put the potatoes and fried mushrooms into a pot with hot broth and cook for about 20 minutes (potatoes must soften).

While cooking the broth chop the garlic and fry it in a pan with flour. Mix everything thoroughly.

Blend the mushroom soup until smooth and add the garlic roux and cream.. Cook everything again for a while and season as desired.

Pour the soup onto plates and only then serve add chopped parsley and blue cheese, preferably grated. It tastes great with slices of fried mushrooms and croutons, and in the meat version – with fried bacon.
