These vegetable pancakes are most popular in two regions of Japan – Osaka and Hiroshima. They are prepared in various ways. However, what they have in common is ease of preparation and universality.
The name of these pancakes comes from two words – “okonomi”, which means “what you like” and “yaki”, which means “frying” or “grilling”. It can be considered that in literal translation it means “fried what you like”.
Pancakes can contain various ingredients. Usually the base is dough, which is prepared from flour, eggs, water and soy sauce. You add your favorite additions to it. They couldvegetables, meat, pasta or seafood. After preparing the dough, the pancakes are fried in a pan in a small amount of oil until golden brown.
A characteristic feature of the dish is its preparation just before serving. Ready, fried pancakes spread with your favorite sauce or mayonnaise and sprinkle with ingredients. These can be chopped nori seaweed, sesame seeds or even fried tofu or shrimp.

Ingredients for the pancakes:
- half a head of small cabbage,
- carrot,
- 4 eggs,

100 g of wheat flour,
- a teaspoon of baking powder,
- 2 tablespoons of soy sauce,
- sun,
- additionally: oil for frying.
Ingredients to serve:
- a spoon of white sesame,
- nori seaweed sheet,
- 4 tablespoons of mayonnaise,
- 1-2 tablespoons of chopped chives,
- 2 tablespoons of oyster sauce.
How to do it:
Shred the cabbage, put it in a bowl and add salt. Leave it for about 10 minutes and then squeeze out the excess water. Peel the carrots and grate them on a large grater.
Crack the eggs into a bowl and then beat them until smooth. Then add wheat flour, baking powder, soy sauce and a pinch of salt. Mix everything together thoroughly. Add the vegetables to the mixture and mix thoroughly.
Heat the oil in a pan. Place pancakes with a diameter of approx. 10 cm and fry on both sides until golden brown.
Spread the prepared pancakes on both sides with a mixture of mayonnaise and oyster sauce. Serve hot, sprinkled with sesame seeds, nori cut into small strips and chives.
