Solanine protects the plant from pests. It can be harmful to humans in larger quantities. High concentrations of this substance can lead to symptoms of poisoning. For example, it may appear:

  • abdominal pain
  • diarrhea
  • headaches

Even small spots can indicate a high concentration of solanine. If the green area is small, it can be cut. But if the stains are extensive, it is better not to risk it.

Solanine does not break down during cooking, frying or baking. Therefore it is important to notice the green spots before heat treatment.

Green spots are not everything. What else should you watch out for?

Green spots on potatoes are not the only situation when should we give up their consumption. Potatoes that have already started sprouting are also a frequent dilemma.

Sprouts they are a signal that the potato is old and begins to produce more solanine. If the sprouts are light, we can remove them. If germination is more advanced, the tubers should be discarded.

Before eating potatoes, you should also be interested in other types of stains than green. Brown spots should also arouse our vigilance. These changes can be the result of, for example, fungal or bacterial infections. These make the tuber unfit for consumption.

How to store potatoes to keep them fresh for as long as possible?

To prevent potatoes from spoiling, it is good to store them in the right way.

  • Store potatoes in a dark, dry and cool place. Best at a temperature between 4°C and 10°C.
  • Do not expose them to light. You will then prevent them from turning green.

When buying early, it is best to choose firm and smooth potatoes without visible damage.
