Before you find out why you should eat burbot, you should know some facts about it. Burbot is the only freshwater species from the cod family. It occurs naturally in northern and central Europe, but also in northern Asia and North America.
It lives at the bottom, in rivers or mountain streams, most often with clean and quickly flowing water. It is also sometimes found in dam reservoirs. In Poland, it can be found in the Vistula Lagoon and the Szczecin Lagoon, as well as in the coastal waters of the Baltic Sea. It is one of Masurian delicacies.
It measures approximately 60 cm in length and weighs up to 2 kilograms. It is distinguished by a flattened head (somewhat similar to a frog’s) and brownish or yellow skin, covered with a marble pattern on the back. A whitish belly is visible from underneath. A characteristic feature by which it can be distinguished is a single mustache located in the middle of the chin.
Burbot tastes as good as cod and is easy to prepare. It is worth buying it not only for the aroma, but also for the taste for its health-promoting properties.
There are approximately 100 kcal in 100 grams of fish. The meat is fatty and provides the body with a large amount of protein and healthy fats. The nutritional values also include: vitamin A and those from group B and minerals (calcium, iron, magnesium, potassium, selenium, phosphorus, zinc).
Regularly eating burbot will support the body’s reaction in the event of infection, and will have a bactericidal effect will strengthen immunity. He will also take care of proper functioning of the visual organ – prevents eye diseases, including the so-called night blindness. Burbot may have a beneficial effect on the nervous system and help regulate hormonal balance. Fish contains selenium, which it is recommended for hypothyroidism.

Burbot has fatty, white meat and almost no bones. The fish must be heat treated – fried, baked or stewed. Before frying, it can be sprinkled generously with lemon juice, seasoned with salt and pepper or fish seasoning and breaded. You can also bake burbot in the oven with the addition of leek or onion and white wine sauce.
