These are crazy beef rolls with aromatic filling will delight every lover of exquisite flavors. Delicate tenderloins with a delicious interior, topped with tomato sauce, create a dish that melts in your mouth. By stewing the meat in broth, the dish acquires a refined taste, and a bit of alcohol adds character. Serve the rolls with mashed potatoes or baked potatoes. Don’t forget about salad, e.g. cabbage or beetroot. Rolls are perfect for an everyday dinner, as well as for more festive occasions.
To prepare this dish, you will need: beef tenderloin. The rolls can be stuffed with various ingredients, in this case we recommend adding them bacon, onion and strong mustard. Thanks to this, the meat will be even more tender and more intense in taste.
Rolls:
- 4 thin beef tenderloins,
- 4 slices of smoked bacon,
- 1-2 tablespoons of mustard,
- 1 white onion,
- 2 cloves of garlic,
- approx. 200 ml of milk,
- 150 ml of cognac or dry wine (optional),
- 150 ml of meat broth,
- oil,
- salt and black pepper.
Sos:
- 1 can of peeled tomatoes or 400 g of ripe peeled tomatoes,
- 1 white onion,
- 1-2 cloves of garlic,
- 1 teaspoon of tomato paste,
- salt, black pepper, sugar,
- oil.
Wash the meat and lightly pound it with a meat mallet. Then place in a vessel, pour milk and add chopped garlic. Set aside in the fridge for 6 hours or overnight. After this time, remove the tenderloins from the milk, drain on a paper towel and wait until they reach room temperature. Season with salt and black pepper on both sides.
Spread a slice of meat, spread a little mustard, add a slice of bacon and pieces of chopped onion. Roll the rolls tightly, inserting toothpicks into them.
Heat the olive oil (or other fat) in a wide pot or deep frying pan and fry the rolls. Then pour in the cognac or wine and wait until it evaporates (a few minutes). Pour the broth into the pan, cover with a lid and keep over medium heat for about 60-80 minutes or until the meat is tender.
In the meantime, prepare the tomato sauce. Heat a little olive oil in a pot, add the peeled and finely chopped onion and fry for a while. Then add canned tomatoes, pressed garlic and tomato paste. Cook over medium heat for about 20 minutes. Finally, season with salt, black pepper and sugar. Halfway through the time of stewing the rolls, pour in all the tomato sauce and stir.
Place hot beef rolls on a plate, pour tomato sauce over them and serve. They are perfect with mashed potatoes.
