Razor rice recipe

Ingredients

  • 10 cloves of garlic
  • 1 large onion
  • 3 very ripe tomatoes (e.g. beef heart)
  • 1 bay leaf
  • 1 chilli
  • 1 bunch coriander
  • 1 kg fresh razor clams
  • 3 cups liquid (clam broth + water)
  • 1 cup needle or carolino rice
  • 1 c. from cha from noz-megda
  • 1 teaspoon of powdered ginger
  • qb olive oil
  • qb fleur de sel

Preparation Method

  1. Start by placing all the ingredients listed next to you, available.
  2. First, add a drizzle of olive oil to the pan.
  3. Immediately, add 5 chopped garlic cloves and the stalks of some chopped coriander.
  4. Then, bring the casserole to the heat and add the razor clams.
  5. Then cover the casserole and let the razor clams open.
  6. Afterwards, turn off the heat.
  7. Then, strain the broth that formed with the razor clams and set aside.
  8. Then, after removing the razor clams from the shells, break them into 2 or 3 pieces and set them aside.
  9. Immediately, add olive oil to the same pan.
  10. Without wasting time, add the chopped onion and the remaining chopped garlic.
  11. Then add some chopped coriander stalks and 1 bay leaf.
  12. Afterwards, place the pan on the heat.
  13. Meanwhile, while it heats, remove the skin from the tomato.
  14. Then, add the tomato (if you prefer, you can crush it slightly) into the casserole.
  15. Immediately, season with nutmeg, pepper and ginger.
  16. Then let it cook a little.
  17. After a few minutes, add the rice and let it cook slightly, stirring well.
  18. Then add the liquid.
  19. There are 3 cups of liquid where you must use all of the razor clam broth and top up the rest with water.
  20. Then, let the rice cook until it is cooked and naughty.
  21. Then, when the clam rice is cooked, fold in the clams.
  22. Finally, add more fresh coriander on top to add freshness to the dish.
  23. Serve the clam rice immediately. It must be very hot.
