Ingredients:
- 2 eggs;
- 3 tablespoons of honey;
- 430 g of cake flour;
- 1 teaspoon of gingerbread spice;
- 80 ml of oil;
- 100 g of sugar;
- 1 teaspoon of vanilla sugar;
- 1 teaspoon of baking soda.
Preparation step by step:
Preparing the dough
Crack the eggs into a large bowl. Add sugar, vanilla sugar, gingerbread spice, honey, oil and baking soda. Mix everything thoroughly so that the eggs are well combined with the rest of the ingredients. Then gradually sift the flour in three batches. After each added portion, gently mix the mass – first with a spoon, and when the dough thickens, knead it with your hands. Knead the dough until you obtain a uniform consistency.
Forming gingerbread cookies
On a floured board, divide the dough into three parts. Put two aside in a bowl and roll one out to a thickness of 6-8 mm. This thickness is crucial – gingerbread that is too thin will not be soft. Use cookie cutters to cut out your favorite shapes from the dough. Place the ready gingerbreads on a baking tray lined with baking paper.
Baking and decorating
Bake the cookies in an oven preheated to 170°C (top-bottom heating) for about 10 minutes. After cooling, decorate the gingerbread cookies as you wish, e.g. with homemade icing.
How to make icing?
In a bowl, mix half a cup of powdered sugar, 1 tablespoon of milk and about 2 tablespoons of lemon juice. Decorate the cooled gingerbread cookies with the prepared icing. If you want, add colorful pearls or sprinkles, or pour melted chocolate over the gingerbread cookies. Enjoy your meal!
