Alternatives to classic cookie ingredients
On the Internet, you can choose from a wide variety of carrot cookies, which contain more or less coconut or coconut oil, some doughs are sweetened with sugar, but you can of course also use honey. Other recipes rely on sweetening with dried fruit such as raisins or pieces of dates.
Flours or other thickeners can also vary significantly. If you want cookies with minimal or no gluten content, you can reach for oatmeal, oat or spelled flour or almond, rice and other flours.
While it’s also quite common to want to minimize leavening agents in these recipes, be aware that where there’s no gluten, there’s no leavening. Accordingly, substitutes for classic wheat flour do not have a good ability to leaven, and therefore it is necessary to add baking powder or soda to the dough. Non-wheat flours are also often more crumbly and the products quite dry, which is also why it is useful to add carrots for softening. Grated coconut will also help with this. How do you bake carrot coconut cookies?
For the following recipe, you will need 1 egg, 90 g of honey and 25 g of liquid coconut fat. Subsequently, 75 g of finely grated carrots, 100 g of oatmeal, 90 g of oat flour, part of which you can replace with grated coconut. Don’t forget the package of baking powder approx. 9 g, a teaspoon of ground cinnamon, a pinch of salt and a pinch of grated nutmeg. If you like dried fruit, you can add 15 g of raisins or other fruit of your choice to the dough. Dates, apricots and plums are suitable.
Making cookies is incredibly simple. Start by whisking the egg with the liquid ingredients. In the second bowl, mix all the loose ingredients and then combine the two into a lumpy dough. You don’t have to process the dough for a long time, but make sure that all the ingredients are combined, and that’s why you also put the dough in the fridge for half an hour. Thanks to this, the flavors and the material are better connected.
Bake the cookies at 170 °C on a baking sheet lined with paper, for about 20 minutes. The resulting cookie should still be soft and moist inside, but already baked.
