To prepare pistachio cheesecake with cherry topping you will need the following ingredients:
- ½ teaspoon of vanilla extract,
- 1 kg of cottage cheese,
- 100 g of white chocolate,
- 150 ml of whipping cream,
- 170 g of butter,
- 180 g of cocoa biscuits,
- 2 tablespoons of potato flour,
- 200 g of pistachio paste,
- 3/4 cup of sugar,
- 350 g cherry frużelina,
- 5 eggs.
Remember to remove the cottage cheese, butter and eggs from the refrigerator in advance to let them reach room temperature.

Start by preparing the bottom. Into the bowl add 180 g of crushed cocoa biscuits. Pour 100 g of melted butter into them. Mix everything thoroughly and use the prepared mixture to cover the bottom of a cake tin (preferably with a diameter of 24 cm, it may be slightly larger). Press well to the bottom. Pour 150 ml of cream into a pot and heat it. Place in a bowl crushed white chocolate cube, pour cream over itwhen it starts to boil and stir until it dissolves. Add 200 g of pistachio paste.

Mix the mixture again until the ingredients are combined. Preheat the oven to 180 degrees Celsius. Pour the cheese mass into the form. Place the cheesecake in the preheated oven and bake for 30 minutes. Then reduce the temperature to 150 degrees Celsius and bake for another hour. When the cheesecake cools down, spread the cherry frosting on its top. Ready!
