Oliwia salad is an alternative to the good old Olivierwhich has dominated our holiday tables for decades. These two vegetable salads seem to be no different from each other. A minor facelift is the addition of tomatoesthat change the character of a classic dish. The new flavor can also be enhanced by adding fresh dill. Try this variant.
Ingredients:
- 3 tomatoes,
- 3 potatoes,
- 2 carrots,
- parsley (root),
- a piece of celery root (about 100 g),
- apple (hard, sour),
- 3-4 pickled cucumbers (about 300 g),
- 200 g canned peas,
- small red onion,
- 3 tablespoons of chopped dill,
- 3 tablespoons of mayonnaise,
- a spoon of mustard,
- salt, pepper, herbal pepper (to taste).
How to do it:
Peel the carrots, parsley and celery root. Scrub the potatoes (leave them in their shells). Boil the vegetables until soft in lightly salted water. After cooking, let cool. Peel the potatoes. Cut all vegetables into cubes.
Wash the tomatoes (if you prefer, you can scald and peel them) and remove the seeds (use them for another purpose). Cut the pulp into pieces similar in size to the other vegetables.
Peel the apple and remove the core. Cut into cubes in the same way as the previous ingredients. Cut the cucumbers in the same way.
Drain the peas from the brine. Chop the onion and dill finely.
Combine all salad ingredients in a large bowl. Add mayonnaise (according to your preferences – you can add slightly less or much more than in the recipe) and mustard. Mix. Season everything and put it in the fridge for a few hours. After this time, check the taste of the salad and season it again as desired.
