Ingredients needed for the dough
First, prepare all the necessary ingredients. For the dough, you will use 1 and 1/2 cups (345 g) of mashed bananas, i.e. about 4 medium or 3 large bananas, 3 cups (375 g) of plain or semi-coarse flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/ 2 teaspoons ground cinnamon and equal amount of salt, 3/4 cup (170 g) unsalted softened butter at room temperature, 1 cup (200 g) granulated sugar, 1/2 cup (100 g) white or brown sugar, 3 eggs, 2 teaspoons pure vanilla extract, and 1 1/2 cups (360 ml) buttermilk.
Ingredients for cream cheese
For the cream, prepare 230 g of full-fat cottage cheese, 1/2 cup (113 g) of unsalted softened butter, 3 cups (360 g) of powdered sugar, 1 teaspoon of vanilla extract, and 1/8 teaspoon of salt.
Banana cake
First, mash the bananas, which should be perfectly ripe. You can do this with a fork or in a blender. Mix the flour, baking powder, baking soda, cinnamon and salt in a bowl. Then beat the butter using a hand or stand mixer with a paddle attachment. The result should be beautifully smooth and creamy.
Then add the sugar and beat the mixture again, preferably at high speed with a mixer for about 2 minutes, until the ingredients are properly combined. Then add the eggs and vanilla and beat with the mixer on medium-high speed until all the ingredients are combined and mix in the mashed bananas.
In the next step, mix the dry ingredients with a mixer set to low speed and add the buttermilk in parts. You should have a thicker dough with no lumps. Pour it into a pre-greased mold and bake in an oven preheated to 180 °C for about 45 to 50 minutes.
You can tell if the cake is baked thanks to the stick test, to which the dough should not stick. If the top browns quickly, you can cover it with foil during baking. After baking, remove the cake from the mold, preferably onto a wire rack and let it cool completely.
Preparation of the cream
Meanwhile, prepare the cream cheese. In a large bowl, using a hand or stand mixer fitted with a paddle or whisk attachment, beat the cottage cheese and butter on high speed until the mixture is beautifully smooth and creamy.
Add the icing sugar, vanilla and salt and beat again, this time on low speed for 30 seconds and then on high speed for another 2 minutes. If you want the frosting a little thicker, add an extra 1/4 cup of sugar. Spread the resulting cream on the cooled cake and put it in the fridge for 30 minutes. Not only will the cream harden, but the cake will also be easier to cut.
