Lumberjack salad with chicken is a real treat for those who need a solid dose of energy. Chicken meat, hard-boiled eggs, gherkins and marinated chanterelles are a combination that makes for the best dinner after a day spent working in the forest. Mild-tasting chicken and eggs create a fantastic balance with spicy, pickled mushrooms and cucumbers. The whole thing is complemented by a portion of creamy mayonnaise. You can make this salad in no timealthough it will probably disappear from plates at a similar pace.
Ingredients:
- 200 g of smoked chicken or poultry meat,
- 4-5 eggs,
- 150 g gherkins (or pickled cucumbers),
- 150 g of marinated chanterelles (or other forest mushrooms),
- 1-2 tablespoons of mayonnaise,
- salt and black pepper,
- fresh dill for decoration.
How to do it:
Cut the chicken meat into strips or cubes. Chicken breast cooked in broth or even poultry meat in broth will also work. Hard boil the eggs (8 minutes), then cool, peel and cut into cubes. Chop the cucumbers finely and place them in a fine sieve to drain excess juice. Cut the marinated chanterelles into halves or smaller pieces.
Place the prepared ingredients in a bowl, add mayonnaise, season with salt and black pepper, and mix thoroughly.
You can serve the lumberjack salad with chicken immediately after preparation or leave it in the fridge for about 15 minutes to cool slightly. Before serving, sprinkle the salad with chopped fresh dill.
