Cheese soup is a simple dish that can be prepared in many ways. However, it is worth choosing one that will not take much time, but will provide a lot of valuable nutrients. The recipe we propose contains three types of cheese. A mixture of cheddar, gouda and processed cheese gives the soup a deep aroma and creamy consistency. However, its base is vegetables. Onion, celery and carrot fried until golden, they add color and delicate sweetness to the soup. Thanks to them, the soup is not only filling, but also contains nutrients. The whole thing is seasoned with cayenne chili pepper, which is known for its warming properties.
As a result, we get a delicious dish that will fill us up quickly. You can serve it sprinkled homemade croutons. However, various herbs and spices will go perfectly with it. If we like aromatic dishes, we can decorate it with parsley, thyme or rosemary. Some people like to sprinkle it on hot soup additional portion of grated cheesewhich will dissolve quickly and enhance the flavor of the dish. People who prefer spicy flavors they can decorate the soup with a little Sriracha sauce — this spicy ingredient will break the taste of the cheese and make sure the whole thing is not bland.
Ingredients:
- 100 g sera cheddar,
- 150 g will be gouda,
- 100 g of processed cheese,
- 500 ml vegetable broth,
- 1 carrot,
- 1 onion,
- 1 stalk of celery,
- 4 tablespoons of butter,
- 3 tablespoons of flour,
- a pinch of cayenne chili pepper,
- salt and pepper to taste.
Peel the carrots and onion and cut into small cubes. Wash the celery and chop it finely. Heat the butter in a large pot and then add the vegetables. Fry, stirring occasionally. When they are nicely browned, add flour and fry for a while, stirring. Pour in the broth and bring to a boil. Add processed cheese to the boiling soup. When it melts, remove the pot from the heat and add cheddar and Gouda cheese. Stir until they dissolve. Finally, blend the soup until smooth and creamy using a hand blender. We try and only then season with salt, cayenne pepper and black pepper. Serve in bowls, sprinkled with croutons.
