It is not always easy to judge the moment when the cheesecake is baked and should be taken out of the oven. If you miss it, the cake will be dry or, on the contrary, raw and too soft inside.
The famous “stick” method will not work for this cake (it is always a bit wet inside). However, the trick of shaking the sheet pan comes to the rescue. To check if the cheesecake is ready, you can gently shake the tray at the end of baking.
The dough should come away from the edges and have a slightly gelatinous consistency (not liquid). Also pay attention to the color of the baked goods. The cheesecake must be slightly brown – “slightly tanned”, not pale.
