These sweet snacks are a real treat for lovers of yeast baked goods. The cookies were stuffed with deliciousness apple-cottage cheese stuffing with a hint of vanilla. Soft dough and perfect filling will perfectly improve your mood. Check, how to make Apple Besoski?
You can sprinkle the finished cookies powdered sugar. They will also taste great with with homemade powdered sugar icing and lemon juice or melted chocolate.
Ingredients for the stuffing:
- 2-3 apples (250 g of pulp after squeezing the juice),
- juice of ½ lemon,
- 250 g of ground semi-skimmed cottage cheese,
- 2 eggs,
- 80 g sugar,
- 2 tablespoons of potato starch,
- seeds from ½ vanilla pod.
Ingredients for the cake:
- 500 g of wheat flour type 450,
- 50 g of fine sugar,
- a pinch of salt,
- 15 g of instant yeast,
- 3 yolks,
- 200 g of butter,
- 125 ml of milk,
- powdered sugar (for decoration).
Melt the butter in a pot and let cool. Heat the milk to about 40°C. Combine flour, sugar, salt and yeast in a large bowl. Add yolks, milk and butter. Knead all ingredients into a uniform dough. Leave them in the bowl. Cover with a cloth and set aside in a warm place for 60-90 minutes. The dough should rise significantly.
Combine cottage cheese with eggs, sugar and starch. Add the seeds from the vanilla pod. Mix until smooth. Peel the apples and grate them on a coarse grater (apart from the seeds). Sprinkle with lemon juice. Squeeze out excess juice. Mix the apples into the cottage cheese mixture.
Preheat the oven to 200°C. Knead the risen dough again. Roll out on a board sprinkled with flour. Use a glass or a round cutter to cut out circles from the dough. Fill with a portion of apple-cheese stuffing and fold in half. Place on a baking tray lined with baking paper. Use the entire dough this way.
Place the tray in the oven. Bake for about 25 minutes. Cool the finished apple besoskis and sprinkle with powdered sugar.
