How about a plum cake with pudding?
To make the preparation really quick and easy, prepare the individual parts of the dough in advance. Cook one vanilla or cream pudding according to the instructions and let it cool. Food foil is placed on top of the cooling pudding to prevent it from forming a shell. But remember that the food foil should not come into contact with food hotter than 70 °C. As already mentioned, you prepare the pudding according to the instructions, i.e. use half a liter of milk and two spoons of sugar for one package.
You can also prepare the dough or crumb in advance. This consists of approximately equal volumes of flour, fat and sugar. It is ideal to use butter, an alternative is also high-quality baking fat. You can also add a little vanilla essence or vanillin sugar for the aroma.
Work the crumb with your hands. At first, mainly the butter will stick to your fingers, but after a while the flour will start to absorb the fat nicely and the typical crumbs will form. For the crumb, you will need 300 g plain flour, 120 g caster sugar, 175 g softened butter and possibly a teaspoon of vanilla essence.
If you have the custard and crumb prepared in advance, the preparation of the cake itself will be extremely fast and you can bake it even before the guests arrive, or when you come home in the evening and you don’t want to prepare anything big. Although the pudding is very good even cold, nothing beats the smell and taste of a freshly baked cake.
Are you ready? So bake!
Heat the oven to 200 °C. Fill a lightly greased cake tin with about 2/3 of the crumbs and press it with your hand to form a crust. So press the crumbs not only on the bottom, but also on the sides of the cake pan.
Pour all the pudding into the body prepared in this way and spread it symmetrically to the sides. Place the plum halves skin side down on the custard layer and cover with the rest of the crumbs. Thanks to this, the crumb will be able to squeeze the juices from the baking fruit.
Bake the cake in an oven heated to 200 °C for about 40 minutes. The crumb on the surface should be nicely golden. After baking, wait for the cake to cool slightly and it can be cut well.
