Gingerbreads are a great sweet snack for St. Nicholas Day and Christmas. They can even constitute a self-made gift Christmas Eve under the Christmas tree. Not everyone likes thin, fragile, but sometimes too hard gingerbread. Then he comes to the rescue recipe for soft gingerbreadthat literally melt in your mouth. They come out fluffy, covered with a slightly crispy shell on the outside, and soft and spicy on the inside.

Ingredients:

Ingredients for the cake:

  • 70 ml of liquid honey,
  • 70 g of soft butter,
  • a spoon of cocoa,
  • 2 eggs,
  • 80 g of fine sugar,
  • 50 ml sour cream,
  • ¾ teaspoon of baking soda,
  • 250 g of cake flour.

Ingredients for the spice:

  • a few cloves,
  • a few shelled cardamom seeds,
  • a few peppercorns,
  • star anise,
  • 1/2 teaspoon of ground cinnamon,
  • 1/4 teaspoon ground ginger.

How to do it:

Prepare homemade gingerbread spice. Combine cloves, peppercorns, cardamom and anise in a mortar. Grind into powder. Mix with cinnamon and ginger.

Pour the honey into the pot. Add butter, cocoa and spice mixture. Heat the contents of the pot over low heat, stirring occasionally until the ingredients are combined. Set aside to cool.

Dissolve baking soda in the cream. Separate the whites from the yolks. Beat one with a bit of sugar until foamy (the other – put it in the fridge in a closed container). After a while, add the yolks. Continue beating, gradually adding sugar. When you get a fluffy mass, mix in the cream.

Combine the egg mixture with the butter and honey mixture. Mix gently. Sift the flour into it in batches. Mix until ingredients are combined. Place the dough in the fridge for 24 hours.

Roll out the cooled dough into a fairly thick cake on a floured board. Use a round cutter to cut out gingerbread cookies and place them on a baking tray lined with baking paper. Knead the rest of the dough again and roll out. Cut out gingerbread cookies until the dough runs out.

Gingerbreads arranged on a baking tray brush with beaten egg white from the fridge. Place in the oven preheated to 180°C. Bake for 10-15 minutes.
