Gingerbread is a cake that is eaten in winter, especially during Christmas. Characterizes long durability and unique aroma and both of these features are unique a mixture of spices. Most of us know it as “gingerbread spice” because that’s how it is sold in every store.
Compositions pGingerbread spices from the store may be slightly different depending on the brand of product we choose. Usually the spice mixture is the same or similar, but the proportions vary. This may also cause differences in aroma.
First of all, store-bought gingerbread spices dominate cinnamon. It has the most of it and is the basis for other aromatic additives. Later we will find the most common cloves, coriander seeds, nutmeg. What may surprise you, ready-made mixtures contain: black pepper and allspicewhich add the typical sharpness. Some brands decide to enrich these ingredients with ginger, cocoa or cardamom.
However, what worries us most about ready-made gingerbread spices is sugar. 100 g spicesfrom the store can contain from 50 to 70 g of sugar. When preparing Old Polish gingerbread or gingerbread, we may not realize that after adding the aromatic mixture our baking will be even sweetery. Problems may also arise in the case of people who cannot consume sugar.
Homemade gingerbread spice I do it not only because of the lack of sugar. It is a home-made product much more aromaticand while making it, the whole house fills with an amazing smell. Additionally, a self-prepared combination of flavors you can freely change according to your preferences and needs. Since I made it once from this recipe, I stopped buying for good.
Ingredients:
- 50 g of Ceylon cinnamon bark,
- 20 g of dried ginger,
- 15 g of cloves,
- 15 g of cardamom,
- 10 g nutmeg,
- 10 g of allspice,
- a pinch of black pepper.
How to do it:
All place the spices in a mortar or grinder. Crush them together and then mix. You can also use ready-made dried, ground spiceshowever, this may be difficult in the case of, among others, cloves.
Ready homemade gingerbread spice use immediately after preparation or pour into a tightly closed container. Use it in the amount specified in the recipe for gingerbread baking.
