Yes, butter is very expensive these days, but let’s realize that we are preparing a Christmas treat that comes to the table only once a year. So it will definitely be better to prepare even one less batch of dough, but it’s really good. In this case, we should avoid substitutes.
Basic recipe
The basic recipe for Linnaeus dough is prepared from one butter (ie 250 grams), 350 grams of plain flour, 120 grams of caster sugar, 3 egg yolks and a packet of vanilla sugar. A smooth dough without any lumps must be thoroughly made from all the ingredients. Before starting further processing, let the dough rest in the refrigerator, ideally until the next day.
Temperature is most important
Everything is fine, the dough has been made and the individual shapes are already prepared on the baking sheet and are waiting for their moment in the oven. At this moment, we can either highlight an excellent result or spoil everything. It depends on the correct baking temperature, which according to experienced confectioners is 170 °C. Why this particular value? It’s actually quite simple.
It has to be “just right”
According to experts, the specified value is exactly the right one, when the melting butter in the dough has no chance to escape into the surroundings, because it will be reliably held by the other ingredients, which will turn into luxurious sweets under the influence of temperature.
So, if the temperature in the oven were too low, we would get greasy pieces that nobody wants to eat. Otherwise, the sugar would get too dark in color before it could be thoroughly baked to the very center.
Remember an important rule
A very important moment is putting the first sheet in the oven. We must not forget that it must be placed in an already thoroughly heated space, otherwise we would cry over the result.
Let’s also not forget that Linnaeus cookies will be baked in approximately ten minutes, so it’s a good idea to set aside time to watch the oven, or entrust another family member with this task. It only takes a single extra minute and instead of beautiful golden candies, you will take out blackish pieces that probably won’t attract anyone.
