The study examined five common cooking methods while preparing chicken breast in a controlled environment. The researchers measured the levels of particulate matter (PM) and volatile organic compounds (VOCs)both harmful air pollutants.
Among the methods tested, air frying produced the lowest levels of pollution. The researchers found that air frying emitted just 0.6 micrograms of PM per cubic meter of air and 20 parts per billion of VOCs.
In comparison, pan frying – the most polluting method – emitted 92.9 micrograms of PM and 260 parts per billion VOCs. Even cooking, often considered the least polluting method, released slightly more pollutants than air frying.

The researchers emphasized that improving ventilation, such as using exhaust fans or opening windows, can help reduce exposure. However, choosing less polluting cooking methods can also make a significant difference.
Christian Pfrang, lead author of the study recently in the journal Indoor Air, noted that while factors such as the amount of cooking oil and stove temperature can influence pollution levels, air fryers consistently emit less pollution. Pfrang also advised continued ventilation after cooking, as pollutants remain in the air for more than an hour afterwards.
