These baked onions will surprise you with their delicacy and depth of flavor. After initial cooking and then baking, the onion loses its sharpness, becoming sweet, juicy and wonderfully aromatic. The crispy, golden crust of breadcrumbs and parmesan adds fantastic texture and an appetizing appearance. Baked onion is a great addition to roasted meats. It tastes great with a garlic baguette with butter or a light salad based on arugula or young spinach.
Ingredients:
- 6 white onions of similar size,
- 100 g breadcrumbs,
- 80 g of parmesan,
- salt and black pepper,
- olive oil or melted butter,
- 1/2 teaspoon of dried thyme or marjoram.
How to do it:
Peel the onions, immerse them whole in a pot of boiling water and cook for about 10 minutes. Then strain and let cool.
In a bowl, mix the breadcrumbs with finely grated Parmesan cheese, salt, black pepper and dried thyme. Mix the dry ingredients and start pouring olive oil or melted butter into them. At first, 2-3 tablespoons. Mix everything so that the dry ingredients soak up the fat and start to form lumps. Add more liquid fat if necessary.
Cut the cooked onions crosswise. Lightly cut off the most protruding ends so that you can easily place the bulbs on a flat surface. Take portions of the cheese filling with a spoon and place them on the cut onions, pressing down with a spoon. The filling should blend nicely into the spaces between the discs.
Preheat the oven to 180°C, arrange the onion halves on an aluminum baking tray or place them in a ceramic dish. Water lightly. Bake the snack for 30-35 minutes until the top is golden brown. Check if the dish is ready by piercing it with a knife. If it pierces the onion smoothly, the dish is ready. Otherwise, continue baking for approximately 5-7 minutes.
Remove the baked onions from the oven. Serve immediately or after cooling as a cold snack.
