There are two schools of preparing dried mushrooms for Christmas Eve stuffing – the one that only boils them and the one that also soaks the mushrooms. It turns out that the first group makes a huge mistake.

Dried hats immediately thrown into hot water, they will need more time to cookto soften. Their aromatic compounds volatilize during thermal treatment and thus they will be deprived of the desired taste. As a result, after long cooking, they may be still hard and will lose their flavor.

For this reason dried mushrooms should be soaked before cooking. To do this, place the hats in a bowl and pour cold water over them. After many hours the mushrooms will become soft enough and they will retain their taste. The water will become a unique essence that can be used as a base for mushroom soup or sauces.

Dried mushrooms should be left to soak for at least 12 hours. Therefore, it is worth pouring them overnight and getting up in the morning and starting preparations.

Dried mushrooms should be boiled for 15 minutes from boiling water. We use this time regardless of what we will use these mushrooms for later. It will soften the caps properly and will not deprive them of their taste.

In what water should you cook dried mushrooms? Only and exclusively in the same in which we soaked them. This will prevent the aromas from washing out even more strongly. Place the mushrooms in a pot and slowly pour the water from the bowl into it. Any impurities should remain at its bottom.

Place the mushrooms in a pot over medium heat and bring them to a boil. Then reduce the flame and cook for a quarter of an hour. After this time, remove the pot from the stove, cover with a lid and set aside to cool. Simply strain the cooked dried mushrooms and chop or grind them.
