There are many types of bacon available in stores. Fortunately, choosing the right type for baking is quite simple – it’s suitable for . What is worth paying attention to, however, is the quality of the meat.
Raw bacon has a high fat content. We can determine whether it is fresh by its color. It should be very light, almost white. Yellow or brown fat may indicate stale meat that is not suitable for processing.
When choosing bacon for baking, remember that size matters. The piece of meat should be large and its weight should be at least 1 kg. Pieces of meat that are too small in the oven may quickly become hard and not firm enough. The structure of baked bacon is also influenced by the fat content. The meat we buy should not be too lean or too fatty — it’s worth finding a piece in which these ingredients are distributed quite proportionally.
Bacon, like any other meat, should be marinated for at least a dozen or so hours. The marinade can be prepared a day or two before baking. Meat that has spent a lot of time in it, it will be more tender, juicy and intense in flavor. Marinating meat for too short a time is a common mistake, which later affects the final result.
Many people wonder what to do with their skin. There are supporters who cut it off, others choose to leave it. Both techniques are good. Just ask yourself what we care about more. During baking, the skin acts as a kind of protective barrier, thanks to which the meat remains juicy despite a long baking time. However, it makes it more oily. People who prefer lean meat can trim it off to suit their preferences.
If you bought bacon with ribs, remove the bones before processing.
Ingredients:
- 1.5 kg of raw bacon,
- 2 tablespoons of cumin,
- 6 cloves of garlic,
- 2 tablespoons of oil or olive oil,
- 1 tablespoon of marjoram,
- 2 tablespoons of salt,
- 1 tablespoon of sweet pepper.
Wash the bacon thoroughly and then dry it with a kitchen towel. Cut the meat lightly. Peel the garlic and cut it into halves. Press it into the cuts on the surface of the bacon. In a small bowl, mix all the spices with oil or olive oil. A thick paste should form. Rub it on the bacon on all sides so that the whole thing is covered with the aromatic marinade. Place the meat in the sleeve and tie the sides. Place the meat in the refrigerator for several hours, preferably overnight.
Bake the bacon in the oven heated to 180 degrees C for approx. 1.5 hours. After this time, remove the meat from the oven and serve it hot for dinner or leave to cool. It is perfect as an addition to bread or an ingredient on a platter of cold cuts.
