Rolled dough can be made in many ways. The sponge cake can be spread with cream cream or filled with poppy seed filling with nuts and dried fruit. In this article you will find recipe for apple rouladewhich not only looks beautiful on the table, but will also appeal to all lovers of traditional baking. Make it instead of classic apple pie.

Ready apple roulade you can serve it alone with coffee or tea. However, if you want a rich dessert, serve it with with the addition of ice cream, vanilla ice cream is best, and homemade whipped cream. Heaven in your mouth.

Sponge cake:

  • 4 eggs,
  • 200 g of powdered sugar,
  • 50 g of wheat flour,
  • 10 g of potato flour,
  • 1 teaspoon of baking powder.

Filling:

  • 1 kg of apples,
  • juice of half a lemon,
  • 3 tablespoons of brown sugar,
  • half a teaspoon of cinnamon.

Additionally:

  • powdered sugar for sprinkling.

Sift wheat flour into a bowl, add potato flour and baking powder. Stir gently.

Place the eggs in a tall dish. Add powdered sugar and start beating at high speed until fluffy. When it increases in volume and becomes clear, add loose products. Mix briefly, just until the ingredients are combined, so as not to add air to the mixture.

Place paper or parchment on a baking tray. Spread the biscuit mixture onto a rectangle. Preheat the oven to 180 degrees Celsius and bake for about 10-12 minutes. Right after baking, turn the cake over, tear off the paper and fold the sponge cake into a roll, wrapping it in a cloth. It should still be warm.

Now prepare the stuffing. Wash the apples, peel them, remove the seeds and cut them into small cubes, preferably grate them. Put in a pot, sprinkle with lemon juice. Add brown sugar and cinnamon. Place the pot over medium heat and cook the apples, stirring occasionally, for about 15-20 minutes, until the apples are softened and starting to fall apart.

If the apples release too much juice, increase the heat for a few minutes to allow the excess liquid to evaporate, but leave the stuffing slightly moist. Set aside to cool.

After an hour, when the sponge cake has cooled down, unroll the roulade. Spread the stuffing evenly and wrap it again, quite tightly. Leave in the refrigerator under foil for several hours. Sprinkle with powdered sugar before serving.
