Orange cheesecake it is velvety, melts in the mouth, with a strongly noticeable accent orange peelsy. It will look great on the Christmas table. Many housewives believe that cheesecake made from fatty or semi-fat cottage cheese that is ground by hand tastes best. If you decide to use cottage cheese from a bucket, choose one of good quality, without unnecessary additives. To ensure that the cheesecake does not crack and turns out perfectly, remember to follow the baking temperature recommendations in the recipe.
The orange flavor notes contained in the cheese mass will perfectly match the buttery base and chocolate topping. In addition to the candied peel, you can also add raisins to the cheese mass; some people like this combination. Before you start baking, be sure to prepare the appropriate baking tray. Bottom:
- 260 g of wheat flour,
- 100 g of powdered sugar,
- 120 g of cold butter,

- 1 kg of cottage cheese, double ground,
- 300 g sugar,

- 200 g of chocolate,
- 100 g of cream 36 percent
Prepare the base. In a large bowl, mix flour, sugar and cold, chopped butter. First, chop everything with a knife, then rub with your fingers until wet crumbs form. Add egg, vanilla extract and orange zest. Mix until combined. Form a ball and wrap it in food foil. Place the dough in the refrigerator for at least 30 minutes.
After this time, take out the dough and roll it out into a thin cake on a floured board. Place it in a 30×40 cm baking tin lined with baking paper. Put the base in the oven set to 180 degrees Celsius for about 10 minutes. Remove and let cool slightly. Melt the chocolate in a water bath. Use a silicone brush to spread it on the bottom.
Prepare the cheese layer. In a bowl, beat the cheese mass until fluffy and smooth. Add sugar and cream. Mix on low speed until combined. Add eggs, vanilla and orange zest. Mix until combined for about 1 minute. Pour the mixture onto the baked base.
Put the cheesecake in the oven set to 160 degrees Celsius. Bake it for 75-90 minutes, until the center of the cake jiggles slightly. Then turn off the oven and slightly open the door. Leave the cheesecake for 60 minutes. After this time, remove the cake from the oven and leave to cool completely.
Prepare the icing. Heat the cream to 50 degrees Celsius. Add crushed chocolate and leave for a minute. Mix everything and leave to cool slightly until the thickening process begins. Pour the icing and spread it on the surface of the orange cheesecake. Place the cake in the fridge until it hardens completely.
