This Czech cake is a cake that crafty people will love. It has flavor in it a classic honey cake, but it does not require so much work from us. However, you still have to prepare three different parts.

The first one is a flaky, buttery base that forms its base. The dough must be thoroughly cooled before rolling it out and putting it in the oven. It will be on it creamy, fluffy custardwhich resembles pudding. It is enriched with honey, which gives the cake its characteristic aroma, which gives it its name. The last element is crispy layerwhich resembles meringue. This is the real icing on the cake. It is enriched with almond flakes, which, when baked in the oven, give the cake an extraordinary aroma.

Ingredients for the bases:

  • 250 g of wheat flour,
  • 125 g of butter,
  • 50 g sugar,
  • egg,
  • a teaspoon of baking powder.

Ingredients for the custard cream:

  • 500 ml of milk,
  • 3 yolks,
  • 100 g sugar,
  • 40 g of wheat flour,
  • a spoon of honey.

Ingredients for the crispy top:

  • 3 proteins,
  • 100 g sugar,
  • 100 g of almond flakes.

Ways of execution:

We start by preparing the bases. Pour flour, sugar and baking powder into a large bowl. Then add chopped cold butter. Rub it with your fingers and combine the ingredients. Then add the egg and knead everything. Wrap the dough in foil and put it in the fridge for about 30 minutes. After this time, we take them out, roll them out and put them in a round baking pan. Bake in a preheated oven to 180 degrees C. for approx. 15-20 minutesuntil it is lightly browned. Remove and leave to cool.

We move on to preparing the cream. Boil the milk in a pot. Place the yolks and sugar in a separate bowl and beat them until light. Then gradually add flour. When the mixture is ready, slowly pour the hot milk into a bowl, stirring constantly. Then we put them back in the pot and cook over low heat. When the mixture is thick, add honey, mix and leave to cool.

Finally, we prepare the mixture for the crispy top. Beat the egg whites until stiff, gradually adding sugar. Finally, very gently add the almond flakes and mix.

Once all the layers have cooled down, let’s move on to assembling the cake. Pour the pudding onto the baked base, and then spread the foam with almond flakes evenly. We put the whole thing in into the oven preheated to 180 degrees C and bake for 25-30 minutes. After this time, take it out and leave it to cool. Cut it only when it is cold so that it does not lose its shape. Finally, we can sprinkle it with powdered sugar or pour a little liquid honey over it for decoration.
