Boiled rice is a side dish to many dishes and is prepared quite often in every household. It is possible to use several procedures to make it. Many people cook it in the classic way in a pot on the stove, others make rice in a conventional or microwave oven, and recently the rice cooker has become very popular in our region. Pohlreich also recommends cooking in duvets
“My mother already taught me to push rice into the duvets so that it would dry out. And her mother again,” says the popular Czech chef, who often conveys his art and gastronomic advice to the public not only through his restaurants and cookbooks, but also in numerous TV shows.
Thanks to this method, you will save time at the stove, when you will be able to devote yourself to something else and with a clear guarantee that you will not burn the rice one hundred percent and it will definitely be completely cooked even without your efforts. And how exactly to proceed?
Start by rinsing the rice
For best results, always rinse the rice thoroughly with cold water first. Preferably several times until clear, unclouded water flows from it. Thanks to this, all the starch is washed out of it, which would make the cooking water cloudy and the rice would end up being sticky. Put the rice in a pot, cover with cold water and mash it between your fingers with your hand. Then drain the water through a colander.
Rice needs variety
At this point, it is important to know if you want to use the rice as an unseasoned side dish, or if you want to make a risotto or a pilaf out of it, for example. In the first case, it is enough to put the rinsed rice in a pot of water, in the second case, it is better to season the rice. “Once you cook the rice, try to realize that its taste is not the most pronounced. So whatever you add to it can be a wonderful benefit to the food,” recalls Pohlreich.
Thanks to this, you can serve rice in a different taste variation every time. When the chef makes the already mentioned pilaf, he first fry finely chopped onions in a little oil together with a pinch of salt until pink and then add some ground pepper, which you can of course leave out or replace with other spices. Only then does he add the rinsed rice to the pot. Then you need to fry the rice in the mixture for a while, stirring constantly, so that each grain is properly coated with oil.
Another Pohlreich trick
If you want to achieve a better taste of rice, it is better to pour it with something other than just plain water. “We were taught that the worst broth is better than the best water.” the chef also advises. The chosen liquid should be 1.5 to 2 times more than rice. Then cover the rice with a lid and cook it for a few minutes on a moderate heat, 5 minutes at most.
Preparation for duvets
“My mother just wrapped the pot with rice in a cloth. It fascinated me as a child,” says Pohlreich, adding that newspaper helps to retain heat even more. It is best to cover the pot with several layers, then put it in the duvets and let the rice “cook” for two hours.
The finished rice can be seasoned
After the specified time has passed, you can further flavor the finished rice with, for example, chopped fresh herbs, vegetables, cheese, but also pre-prepared meat.
