Herring salad is the real star of the Christmas table – elegant, colorful and full of flavor. Juicy herring fillets envelop the creamy, vegetable interior, maintaining the perfect contrast between them salty fish and slightly sweet vegetables. Prepare it if you want to impress your guests or when you want a nutritious snack.
Ingredients:
- 500 ml herring fillets in salted or vinegar marinade,
- 2 potatoes,
- 3-4 carrots,
- large parsley root,
- small leek,
- 2-3 pickled cucumbers,
- 2-3 eggs,
- a can of green peas (or approx. 150 g of cooked frozen peas),
- a spoonful of lemon juice,
- a teaspoon of mustard,
- mayonnaise,
- salt and black pepper,
- slices of carrots, colorful peppers, fresh herbs for decoration.
How to do it:
At the beginning prepare the herring. Soak the fillets in water for 2 hours. Change the water while soaking. Cut 300 g of the herring into small cubes and put it in a bowl, and cut the rest into strips.
Then take care of vegetables and eggs. Boil the carrots, parsley, celery root and potatoes in their jackets, then peel and cut into small cubes or press through a salad slicer. Peel and cut hard-boiled eggs in a similar way. Chop the leek finely. To soften its sharp taste, pour boiling water over it. Cut the cucumbers into small cubes and drain them in a sieve, then place them in a bowl. Finally, add green peas.
In a separate bowl, mix mayonnaise, mustard and lemon juice. Season with salt and black pepper. Stir the sauce vigorously, then pour it into a large bowl and mix.
Place the herring salad in a decorative salad bowldecorate with herring slices, colorful peppers, basil and dill leaves. Place the salad in the fridge and always serve chilled.
