We most often make dumplings from flour, salt and water, but is this the only option? If you want to change the dumpling dough to make it even more smooth and elastic, be sure to add… kefir to the mixture.. We present a simple recipe that everyone can handle.
It is worth making the dumpling dough with kefir instead of water, because, as mentioned, it is smooth, elastic and soft. Apart from that it is better for kneading and rolling, which makes the preparation process much easier. That’s not all…
Kefir has a positive effect not only on the formation of the dough, but also on its taste. Dumplings made with this product have a slightly sour tasteperfectly matching both savory and sweet fillings.

To make the perfect kefir dumpling dough, we need a total of 5 products. Usually, each of us already has them in our kitchen.
What ingredients do we need to make the dough? ? Other list:
- 1 cup of warm kefir;
- 600 g of wheat flour;
- 3 tablespoons melted butter;
- 1/3 teaspoon of baking soda;
- a pinch of salt.
For starters combine warm kefir, melted butter, baking soda and salt. Already at this stage the mass becomes fluffy and elastic due to the activation of soda by warm kefir.
In the next step sift wheat flour into these ingredients. Stir the dough constantly to make it elastic and smooth, without any lumps.
Place the prepared mass on the kitchen counter, previously sprinkled with flour. Knead the dough until it no longer sticks to your hands. This may take up to 10 minutes.
Then cover the mass with a cloth and set it aside for 15 minutes. After this time Roll out the dough into a thin cake and start cutting out circles e.g. with a glass.
Place stuffing on each circleand then stick them together into dumplings. Let’s pay special attention to the edges – they must be glued well so that the filling does not leak out.
Dumplings prepared this way cook in batches in boiling, salted water. They are ready to be removed when they float to the surface.
On Christmas Eve, dumplings are most often stuffed with sauerkraut and wild mushrooms. In the sweet version, you can stuff them with white cheese, e.g. cottage cheese with added sugar.
The traditional filling is cottage cheese, potatoes and onion. Then, Russian dumplings are created, which many people eat every day.
In a modern version we can serve them with minced pork, onion and spices. The dish will be aromatic and filling.
Another suggestion that may work even on Christmas Eve is: dumplings with fresh spinach, crumbled feta cheese and garlic. This stuffing tastes great in kefir dumpling dough.
