It’s here, the season of Advent has just begun, and that leads of course to one beautiful evening, Christmas Eve. There is no child who does not look forward to this evening, and even adults cannot help but feel the slight tension that accompanies the classic and unmistakable atmosphere of Christmas.
Of course, Christmas is beautiful, but nothing is perfect. Unfortunately, the Christmas season is also accompanied by stress about finding last-minute gifts, the fear that you won’t have time to prepare, bake, get everything, and so on.

Here in the Czech Republic, the Christmas Eve menu is completely unchanged. To begin with, fish soup, which, however, quite a few households love to avoid and choose some other type of soup. Honestly, fish soup is not the most enjoyable part of the evening. Subsequently, there are two possible courses. Carp or steak with potato salad. There is practically no train through it. And finally, of course, the most beautiful thing. A sweet spot before singing carols and giving gifts under the tree. Sweets.
Candy is an absolutely indispensable part of Christmas, but also of Advent. During Advent, all the candy needs to be baked. And that’s not all. Everyone in the family has their own typical recipe, which makes the sweets different from the others, everyone likes a different kind, and it seems unrealistic to manage both rolls and line cookies, as well as wasp’s nests, meringues, coconuts, gingerbread and so on. If you want to make very simple gingerbread cookies that are also not quite classic, this recipe is just for you.
Poppy gingerbread cookies
First, take 500 grams of plain flour and sift it together with 250 grams of powdered sugar, a teaspoon of baking soda and a teaspoon of ground gingerbread spice. Mix everything, then add 100 grams of honey and 3 eggs.
Now mix all the ingredients and make a smooth dough out of them. Roll out the finished dough and you can start cutting. Then bake the gingerbread in a preheated oven at 180 degrees Celsius for about 8 minutes. Once the gingerbread cookies are still warm from the oven, brush them with beaten egg and sprinkle with poppy seeds.
Leave the gingerbread cookies to cool. In the meantime, you can prepare the frosting. Take an egg, separate the yolk from the white and put the white in a bowl. Then add a few drops of lemon juice, 3 spoons of ground poppy seeds and gradually add powdered sugar while mixing with a whisk.
In total, you should put about 200 grams of it in there. Add sugar until the frosting has the right consistency. And you’re done. Once the gingerbread cookies have cooled, you can start decorating them.
