These delicious little snacks are proof that herring they can be the star of any party. Green olives, pickled onions and peppers they add character, color and great taste. Perfect for a quick bite between conversations at the table – light, expressive and surprisingly delicious. This is an appetizer that proves that – seemingly boring – herring can be elegant and very tasty. Below you will find a delicious recipe herring sticks.
Herring plugs are among those appetizers that can be adjusted to individual preferences. Various types of pickled vegetables will go great with herring, you can also add mushrooms, olives, dried tomatoes and even boiled quail eggs.
To prepare herring sticks, you will need:
- 4-5 herring fillets with salted or vinegar marinade,
- 10-12 green olives from a jar stuffed with peppers (or without stuffing),
- 10-12 pickled pearl onions,
- 1-2 pieces of pickled peppers.
To make corks, you can use salted or vinegared herrings. If you use salted herrings, soak them in cold water first (for about 2 hours). Simply remove the vinegar pickle fillets from the jar – or use homemade vinegar pickle. Cut the whole herring fillets in half lengthwise and in half again in the middle to obtain 4 pieces from one herring sheet.
Remove olives, peppers and onions from the brine and drain in a sieve. Start filling the corks. Take olive oil and wrap it with a piece of herring, then stick it on a stick. Then add the onion and a piece of pickled pepper. Finally, repeat the operation of wrapping the olive with herring and sticking it on a stick. Prepare the remaining corks in a similar way until the ingredients are finished.
Herring plugs taste best immediately after preparation. Store any excess in a tightly closed container in the refrigerator.
