Herring salad is a very broad concept. It can be prepared in hundreds of ways. It’s worth it, for example get inspired by the cuisine of our eastern neighborswho during the Christmas season prepare the so-called herring in fur, i.e. under a blanket of root vegetables. This party herring salad will be perfect for both the Christmas table and New Year’s Eve party.
Ingredients:
- 5 sheets of herring fillets (in salt mortar),
- 500 g potatoes,
- 500 g beets,
- 2 medium carrots,
- 6 eggs,
- 2 small onions,
- mayonnaise (to taste),
- salt, pepper (to taste).
How to do it:
Peel all the vegetables and cook until soft (taking care not to overcook them – they should remain firm) in salted water. Cook the beets in a separate pot. Cool the cooked vegetables.
Boil the eggs hard (about 8-10 minutes after the water boils). Cool and peel. Separate the whites from the yolks. Cut the egg whites into cubes and chop the yolks very finely.
Place the herring fillets in a bowl of cold water. Replace the water with fresh water from time to time, checking whether the herring is salty enough. When they obtain the desired taste, dry them with a paper towel, cut them into small cubes and place them on a large plate.
Cut the onion into cubes and scatter it over the herrings.
Grate the cooked vegetables on a coarse grater. Place the potatoes evenly on the herring. Sprinkle them with pepper and spread a thin layer of mayonnaise.
On the potato layer, put a layer of grated carrots, then chopped egg whites, and finally – potatoes. Spread mayonnaise on each layer and season with pepper to taste. Spread mayonnaise on the top beetroot layer as well. Decorate everything with chopped egg yolks. Store the salad in the refrigerator.
