Do you want to surprise your guests with an original baking this holiday season? Instead of the traditional cheesecake with raisins, make a cheese and lemon cakewhich will look beautiful on the Christmas table and fill the entire house with its scent. This recipe will not cause the cake to fall, it will be as fluffy as a cloud.
The basis of a successful lemon cheesecake is good oil, e.g. Polish Oil. Thanks to this ingredient, the baked goods will be tasty, soft and will remain fresh for a long time. We will also prevent the dough from drying out.
For this baking we also add lemon extract to obtain a refreshing taste. The lemon note balances its sweetness.
What ingredients do we need to make lemon cheesecake? Here is the list:
- 1 kg of cottage cheese;
- 7 eggs;
- 1 cup of milk;
- 1/2 cup of rapeseed oil;
- 1/2 cup of sugar;
- 80 g lemon pudding;
- 1 teaspoon of lemon extract.
To make lemon, first we need to separate the egg whites from the yolks and beat them until stiff. On the other hand Mix the yolks together with the cheese curd and sugar.
In the next step Pour lemon extract and oil into the bowl with the cheese mass and add the pudding. Then onto these ingredients we also add milk.
Then to the cheese mass add the previously beaten egg whites. We need to mix them gently with a spoon or spatula. This way we will keep the cake fluffy.
The dough is prepared in this way pour into a mold with a diameter of 23 cmwhich we previously lined with baking paper. Bake the lemon cheesecake at 180 degrees for 45 minutes.
At the end Cool the cake and put it in the fridge for at least 4 hours. We decorate the cake as we wish – we can sprinkle it with powdered sugar, cover it with chocolate icing or icing.
However, we recommend it for Christmas decorating lemon cheesecake with nuts, cranberries, cinnamon sticks and anise. It will look great if we decorate it with tangerines and grated orange peel.
