Traditional poppy seed cake appears on tables in many homes. His delicious yeast cake and mass with dried fruits and poppy seeds are the quintessence of Christmas. To prepare poppy seed cakeyou will need the following ingredients:
- 400 g of wheat flour,
- 120 g sugar,
- 150 ml of milk,
- 50 g melted butter,
- 3 yolks,
- 30 g of fresh yeast.
Poppy seed mass:
- 250 g wet,
- 50 g of butter,
- 2 tablespoons of honey,
- 80 g of powdered sugar,
- 150 g of dried fruit (nuts, raisins, apricots, candied orange peel),
- 3 tablespoons of plum jam.
Decoration:
- 100 g of powdered sugar,
- 2-3 tablespoons of water,
- candied orange peel.
Rinse the poppy seeds and pour boiling water over them in a pot. Heat over low heat and stir to evaporate the liquid. Cover the poppy seeds overnight. In the morning, strain and grind the poppy seeds in a food processor three times. Melt the butter and honey in a pot. Then add ground poppy seeds, powdered sugar, dried fruit and jam. Mix everything thoroughly and heat gently for a few minutes. Set aside to cool.
Heat the milk until it is lukewarm but not hot. Dissolve the yeast in it with a tablespoon of sugar and a tablespoon of flour. Set the dough aside for 15 minutes until it starts working.
In a large bowl, mix flour and sugar. Add yolks, melted butter and ready leaven. Knead the dough until it is smooth and elastic. Sprinkle with a little flour if necessary. Cover the dough with a cloth and set aside in a warm place for about 1 hour to double its volume.
Divide the risen dough into two parts. Roll each of them into a rectangle about 5 mm thick. Spread the poppy seed mass evenly on each rectangle, leaving a 1-2 cm margin at the edges. Roll the dough into a roll, starting from the long side. Pinch the ends to prevent the mixture from leaking out. Place the wrapped poppy seed cakes on a baking tray lined with baking paper. Place in the oven preheated to 180°C and bake for about 40-45 minutes until golden and baked.
When the poppy seeds have cooled down, make the icing using powdered sugar and water. It should have a thick consistency, which you can control by adding more of one of the ingredients. Pour over the cake and sprinkle with candied orange peel.
