Traditional Zamość herring. Minimum number of ingredients, maximum taste

Zamość style herring is one of the easiest ways to prepare fish fillets – with onion, in oil. This dish may seem unsophisticated, but its charm lies in its simplicity. Minimal number of ingredients allows you to enjoy the taste of the herrings themselves, which is perfectly enhanced by the lemon aroma. Traditional Polish dish in this respect, it wins on the holiday table with sophisticated herrings in cranberries and nuts or in chocolate sauce. Nothing tastes better in a Christmas feast of flavors than such an ordinary, expressive snack.

Ingredients:

  • 8 sheets of herring fillets (in salt mortar),
  • 4 small onions,
  • 2 lemons,
  • 500 ml sunflower oil,
  • 3 grains of allspice,
  • a few grains of black pepper,
  • 2 bay leaves,
  • milk, water (for soaking the herring).

How to do it:

Place the herring fillets in a bowl and pour cold water over them. Soak until they reach the desired flavor (they will be very salty at first). Replace the water with fresh water every half hour. During the last replacement, replace the water with cold milk – this will make the herrings more tender. Cut the herring fillets into approximately three-centimeter pieces.

Peel the onions and cut into half rings. Place in a colander and pour boiling water over it. Peel the lemons and cut into thin slices.

In a glass vessel (e.g. a large jar, bowl), arrange pieces of herring, onion and lemon in alternating layers. Add spices from time to time (one grain/leaf at a time). Pour oil over everything. Set aside in the fridge overnight.
