They are healthy, light and cheap. Take advantage of the potential of vegetable meatballs and treat yourself to them as a meatless meal (at least) once a week!
Meatballs are said to be a Scandinavian invention. In Bohemia, they appeared on plates mainly thanks to the cook Marie Dobromila Rettigová, who in the first half of the 19th century described them as cutlets. Their basis was veal from a part called karbanátl. Meat patties gradually made their way into other cookbooks.
For example, in Marie Janků-Sandtner’s recipe, they were prepared from a mixture of minced meat, soaked buns, eggs, bacon, onions, marjoram, lemon peel, pepper and salt. The fried buns were served with mashed potatoes, or stewed lentils, carrots or spinach. The classic recipe – of minced meat with onions, garlic and marjoram – was adopted only in the twentieth century and practically still works today.

Meatballs a little different
Current cookbooks contain several types of meatballs. Not only the meat ones are popular, but also their vegetarian variations. One of them is, for example, a meatball made of tofu and vegetables, which is filling and healthy.
How to prepare it: Mix 400 g of coarsely grated celery, 70 g of chopped onion and crushed cumin in a bowl. Fry the mixture in oil and as soon as it softens a little, throw in 200 g of grated tofu, chopped celery and cover everything with 100 ml of 33% cream.

Heat the mixture and then let it cool. Meanwhile, beat 4 eggs with starch in a bowl and thicken everything with breadcrumbs. Combine both mixtures and shape meatballs from the resulting dough. Don’t know how to do it? Try the simplest procedure – roll the dough into balls and lightly press them with a fork. Then wrap the finished pancakes in breadcrumbs and fry until golden. And you’re done!
What’s wrong with them?
You can serve vegetable meatballs in the same way as classic meatballs. They taste great with mashed potatoes, potatoes or “just like that” with bread. You can’t even make a mistake if you prepare a fresh vegetable salad for them. As nutritionists say – you can never have enough vegetables!
