Prince’s cake with the addition of dark beer and lots of dried fruit it is extremely aromatic and stays fresh for a very long time. Although the recipe includes a list of nuts and dried fruits that should be added, there is nothing stopping you from slightly modifying the recipe by adding the ingredients you like the most. For example, almonds and walnuts will fit perfectly here. Remember to store the finished dough under foil.
Before you start baking, prepare the appropriate form. A 30 cm long cake tin will work well. To prepare Kek Książęcyyou will need the following ingredients:
- 200 g of soft butter,
- 200 g of brown sugar,
- 3 eggs (size L),
- 270 g of cake flour,
- ¼ teaspoon of cinnamon,
- ¼ teaspoon of nutmeg,
- a few cloves (ground in a mortar),
- 25 ml of liquid honey,
- 150 ml of dark beer,
- 50 ml of rum,
- 150 g dried cranberries,
- 150 g raisins,
- 50 g of dates,
- 50 g dried plums,
- 50 g of almond flakes,
- 75 g pecans,
- 1 orange.
Wash the orange thoroughly. Grate the peel (only the orange part) and squeeze the juice. Room of dates and plums. Combine with raisins and cranberries in a bowl. Pour rum over the dried fruit and add orange juice so that the liquid covers the fruit. Leave to soak. Cut the nuts into not too small pieces. Set aside some for decoration.
Cream the butter and sugar until fluffy. Without stopping mixing, add one egg to the mixture. Then gradually add the flour and spices sifted through a sieve. While mixing the dough with a spatula, slowly pour in the beer and honey. Finally, mix in the drained dried fruits and nuts (set aside some for decoration – mix with the reserved nuts), orange zest, as well as the rest of the pecans and almond flakes.
Grease and flour a 30 cm long cake tin. Pour the dough into it and smooth it out. Sprinkle the previously set aside dried fruits and nuts on top. Put the cake in the oven preheated to 150°C. Bake for about 4 hours (until the stick is dry).
