This one differs from classic baked goods mainly in the way of preparing the cheese mass. Instead of baking, the mass is cooked over low heat, which allows it to… obtaining a smooth, velvety consistency. Potato starch plays a key role here, as it effectively thickens the mass, giving it an excellent structure. What’s more, the cheesecake does not require the use of gelatin or additional stabilizers.
Cooked cheesecake is also a great solution for people who don’t feel confident in baking cakes. No risk of burning or drying out makes even novice confectioners can easily prepare this dessert.
Preparing cheesecake consists of two main stages: creating a biscuit base and cooking the cheese mass.
Ingredients – divided into the cake base and the cheese mass:
Bottom:
- 300 g biscuits
- 50 g butter (melted)
Cheese mass:
- 1 kg of cheese curd (preferably ground three times)
- 150 g of sugar
- 100 g butter
- 3 eggs
- 2 tablespoons of potato starch
- 1/2 cup of milk (125 ml)
How to prepare the cake base and cheese mass:
Bottom:
- Crush the biscuits thoroughly into small pieces (you can use a blender).
- Combine them with melted butter, mixing until the mixture becomes uniform.
- Line the bottom of the cake tin with it, pressing it carefully, e.g. with the bottom of a glass. Place in the refrigerator while preparing the mixture.
Cheese mass:
- Place cottage cheese, butter, sugar and eggs in a large pot with a thick bottom. Heat everything gently over low heat, stirring constantly.
- In a separate bowl, mix the potato starch and milk to create a slurry. Slowly pour it into the mixture, stirring constantly to avoid lumps.
- Cook the mixture for a few minutes until it thickens and becomes creamy.
Assembling the cake:
- Pour the prepared cheese mass onto the previously prepared biscuit base, spreading it evenly.
- Set aside to cool, then place in the refrigerator for at least 6 hours (preferably overnight).
Cooked cheesecake is delicious on its own, but if you plan to serve it on a larger occasion, such as a holiday, think about nice accessories. The classic topping will certainly be chocolate or caramel, plus fruit (fresh raspberries, blueberries, kiwi or tangerine slices) and powdered sugar, which will sprinkle the whole thing like winter snow.
While the classic version of the recipe is excellent, you can easily modify it to suit your tastes. A winter cake idea is to add a pinch of cinnamon to the cheese mixture. You can also use Oreo cookies for the base instead of classic biscuits. In a more advanced version, when you want to impress your guests and have more time, make a layered cheesecake layered with jelly or fruit mousse.
