Cheesecake is a must-have item on the Christmas menu. And sometimes we bake it only on special occasions. In such a situation, it is better not to experiment with new recipes and reach for a simple recipe for a reliable cheesecake. If you want to add some originality to your baking, decorate it with a unique cajmak and chocolate icing.
Ingredients:
- 1 kg of cheesecake cottage cheese,
- 250 g mascarpone serka,
- 6 eggs,
- 200 g of sugar,
- 2 sugar-free vanilla puddings (2 x 40 g),
- seeds from 1 vanilla pod,
- 200 g butter 82%,
- 200 g butter biscuits,
- 250 g of fudge mass,
- 75 g of dark chocolate,
- 100 g chopped nuts.
How to do it:
Melt the butter in a pot. Cool.
Blend the biscuits into powder. Mix with half the butter. Place the obtained mass on the bottom of a 24 × 24 cm baking tin. Place in the fridge while you prepare further.
Warmed to room temperature Beat the eggs with sugar until fluffy. Add the pudding to the mixture and seeds scraped from a vanilla pod. Mix until ingredients are combined.
In a separate vessel mix the cheese curds (choose a good quality product – with simple composition), mascarpone and the rest of the butter.
Combine both masses. Pour into the form, on the biscuit base. Place in the oven preheated to 180°C. Place a vessel filled with boiling water on the lower level. Bake for 20 minutes. Reduce the oven temperature to 150°C. Bake the cheesecake for another hour. Leave to cool in the oven with the door slightly ajar.
Crumble the chocolate and melt it in a pot with the fudge mixture. Mix. Spread slightly cooled topping on the cheesecake. Sprinkle with nuts. Set aside in a cool place overnight.
