Crispy rice pudding is a strange proposition but it can make perfect sense. Futuro Hoje was to see how Portuguese students propose new foods, as part of the national version of European awards.
Developing new foods is one of the challenges presented to students from various areas by the Ecotrophelia awards. The courses most directly linked to food are at the front, but the composition of the teams is free and can include design or administration students.
This year, the Ecotrophelia Portugal award went to dehydrated fruit rolls in which 99% of their composition is fruit wasted by the food industry. It was created by three students from Coimbra and Aveiro in biochemistry and design masters. They were entitled to participate in the European competition, without the same success.
