Poppy seed mass it is a traditional ingredient of many holiday dishes. Every grandmother has her own unique way of preparing it, full of clever tricks and secrets. Try our recipe and get a classic, aromatic and perfectly seasoned poppy seed mass.
Ingredients:
- 2 cups of blue poppy seeds,
- 50 g raisins and/or dried cranberries,
- 50 g walnuts,
- 50 g of dried apricots and/or dried plums,
- 50 g of orange peel,
- 50 g of butter,
- 50 g of honey,
- optional: sugar.
We start with a good one to get rid of any impurities. Then we pour it into the pot. Pour water over it and cook for about 5 minutes. Then strain it through a fine strainer and leave it to cool. During this time, we should get rid of any excess water that may be present. Then we grind it in a grinder with the smallest holes. You may need to grind the poppy seeds twice.
We move on to preparing the dried fruits and nuts – cut larger apricots or plums into pieces. Place ground poppy seeds, honey, butter and dried fruit in a large pot. Heat everything over the lowest heat and mix regularly. When the ingredients are combined, it is worth trying the mixture. If it is not sweet enough, you can add a few tablespoons of sugar. Remove from heat, leave to cool and use immediately or store in the refrigerator. Poppy seed mass – this way we will be sure that it will last intact until Christmas.
Improperly drained maki equals one – the poppy seed mass is too thin. Because of this adding it to baked goods and dishes becomes risky. There are several solutions to this problem. The first and simplest is to cook the mixture longer. However, it is quite risky because the mass can burn very quickly. This should be done very carefully, stirring constantly. The excess liquid should evaporate and the mass will thicken spontaneously.
Another way is to add to it semolina or breadcrumbs. Both ingredients will be unnoticeable in the dish and will quickly bind excess water. They will effectively improve the consistency.
It often happens that the mass becomes dry quickly. In other cases, immediately after preparation, we may notice that it is too little liquid. With the help of a few ingredients we can remedy this. At the same time, we will make sure that it will stay fresh and moist longer.
The cause may be too dry mass straining the poppy seeds too thoroughly. When there is too little water in it, it may become too dry when re-boiled. Please note that the solution to this problem it is not necessary to add an additional portion of water. This way we will obtain a diluted mass with a weaker aroma.
A much better idea is to enrich the mass more honey or melted butter. Others choose to add the pulp while cooking peeled, grated apple. It not only improves the structure of the whole, but also adds a fresh, slightly sour aroma and sweetness.
Adding to the mass is also a popular solution a small portion of milk or cream. However, please remember that it may affect the taste of the mass.
